The internet’s weird obsession with pickles really is getting out of hand. I mean we’ve had pickle cupcakes for heaven’s sake, who in their right minds wished for this? I’m all for a slice or two in a decent burger but there are boundaries and you shouldn’t cross them.
Not afraid to one-up themselves, Delish have decided there isn’t enough “pickle-ness” in the world and gone and made a pickle mozzarella stick (auto correct changed “pickle mozzarella stick” to “pizza mozzarella stick” 4 times before giving up – even the internet knows that this is insane). The pickle mozzarella stick isn’t as gross as the pickle cupcake but it’s definitely as crazy.
Pickle cupcakes and pickle mozzarella sticks are two of many Frankenstein-esque creations from by the Delish team. They are very bizarre and will leave you scratching your head. So far we’ve had Pickle Pizza, Pickle Hummus, Pickle Wings, and even Pickle Bread. When will it stop? No one can like pickles this much.
For your pickle mozzarella sticks, you’ll need eight whole dill pickles, eight sticks of string cheese, a cup of flour, a teaspoon of garlic powder, half a teaspoon of paprika, kosher salt and freshly ground black pepper.
You also need to get your hands on three lightly beaten eggs, two cups of panko breadcrumbs, one teaspoon of chopped dill for garnish, and ranch or marinara for dressing. Try not to eat your ingredients before you cook them.
Preheat your oven to 400 degrees and line a medium baking sheet with parchment paper. The food prep process starts with the pickles (obviously), you remove the ends, hollow the flesh out with a small spoon and stuff your pickle with string cheese. It will probably feel wrong, like putting salt in your tea or the first time you… well try to make pickle mozzarella sticks but you’re doing it right.
Trim off the excess string cheese so that it’s flush with the pickle, and eat the scraps (what else are you going to do with them?) Into a small shallow bowl, combine flour with your garlic powder and paprika and season with salt and pepper. Place the eggs and panko in separate shallow bowls and line them up next to your raw mozzarella pickles. Dredge pickles first in flour, then eggs, then panko.
Bake for 20 minutes on your baking sheet, flipping halfway through, and serve it up with ranch dip or marinara sauce and pat yourself on the back for another successful epicurean adventure in pickle land – yes, I know this isn’t your first time playing with pickles, you clicked on a link on how to make pickle mozzarella sticks!
